Braised chicken breast in casserole with lion’s mane mushrooms


沙鍋雞脯猴頭菇

Effect: Eating lion’s mane mushroom and chicken breast together can enrich blood and alleviate neurasthenia, dizziness, insomnia and fatigue.
Ingredients: 800g soaked lion’s mane mushroom, 600g chicken breast, 50g dried scallop, 120g ham, 100g winter bamboo shoots, 80g tofu skin, clear soup, appropriate amount of dried scallion, ginger, salt, cooking wine and oil.
Preparation:
1) Squeeze the lion’s mane mushrooms dry, cut into slices and set aside;
2) Rinse chicken breast, cut into pieces and set aside;
3) Remove unwanted parts of the dried scallion and rinse; cut the ham into slices and set aside;
4) Tenderize the winter bamboo shoots by pounding with the knife and cut into pieces. Rinse the tofu skin and cut into sections.
Method: Put tofu skin, winter bamboo shoots, dried scallop into the stock pot, blanch, take out and then put into casserole to heat. Put in oil and bring to a medium heat, put in the lion’s mane mushroom slices, chicken breast meat slices and ham slices; put in the scallion, ginger, cooking wine, salt and clear soup, cover the pot lid, stew the chicken breast meat to tender and take out of the pot.
