Penny bun beetroot kidney bean soup


牛肝菌紅菜頭紅腰豆湯

Effect: It helps reduce cholesterol and is good for liver and eyes. It is also anti-aging.

Ingredients: Beetroot, carrot, 20g red kidney beans, 10g penny bun, 1 big tomato, a few lean pork slices, 2500cc water
Preparation:
1. Rinse red kidney beans, soak it overnight with water, drain and set aside;
2. Peal the beetroot, quarter, cut into slices and set aside;
3. Rinse the tomato, cut into pieces and fry them with a tea spoon of oil and ginger slices. Until the ginger slices are fried to tendered, set them aside; do not throw away the fried ginger slices which can be used for the soup later;
4. Cut the carrot into slices and set aside;
5. Soak the penny bun with warm water, rinse and drain, cut into pieces and set aside
Method: Boil 2500cc of water, put the beetroot, red kidney beans and fried ginger slices. After boiling for 30 minutes, put in the carrot; after 30 minutes, put in the penny bun, after a while, reduce the heat to low and boil for 30 minutes. Put in the fried-to-tendered tomato into the soup. Until the tomato is blanched and pureed, put in the lean pork slices. After the water is bubbling, put in a pinch of salt. Enjoy your healthy dish!
